This rhum agricole ambré is made from the distillation of pure sugarcane juice, then matured 12 to 24 months in oak vats. During the harvesting season between February and June, the freshly cut sugarcane is crushed in order to extract its juice called «vesou». This juice is then fermented from 24 to 36 hours in open-air vats and then distilled at 75° maximum in order to preserve the aromas and then rests for 1 to 2 years in oak vats.
Clément Ambré has woody, vanilla, honeyed and fruity notes with hints of figs and dates, and has a very good roundness on the palate.
